    Carrageenan: A safe food additive

    Carrageenan, also known as eucheuma gum or agar-agar, refers to a hydrophilic colloid extracted from red algae seaweeds such as eucheuma, agar-agar, and cercaria.

     

    Carrageenan's chemical structure is composed of calcium, potassium, sodium, and ammonium salts of polysaccharide sulfates composed of galactose and anhydrogalactose. Due to the different sulfate bond forms, carrageenan can be divided into K (Kappa), I (Iota), and L (Lambda) types. It is widely used in the manufacture of jelly, ice cream, bird's nest, and other products.

    Solubility: Insoluble in cold water, but can swell into a gelatinous mass. Insoluble in organic solvents, it readily dissolves in hot water to form a translucent colloidal solution (the dissolution rate increases in water above 70°C).

     

    Gelling: It can form a thermoreversible gel in the presence of potassium ions.

     

    Thickening: At low concentrations, it forms a low-viscosity sol, nearly a Newtonian fluid. Higher concentrations form a high-viscosity sol, demonstrating a non-Newtonian fluid.

     

    Synergy: It interacts synergistically with colloids such as locust bean gum, konjac gum, and xanthan gum, improving the elasticity and water retention of gels.
